Sabudana Khichidi

  1. 2 cups sabudana (tapioca pearls)
  2. 2 cups water
  3. 2 tbs oil
  4. 1 ts cumin seeds
  5. few curry leaves
  6. 1/2 tbs grated ginger
  7. 2 green chillies finely chopped
  8. 2 medium sized potatoes peeled and cubed
  9. 1/2 cup roughly crushed roasted peanuts
  10. salt to tase
  11. 1 ts sugar
  12. 1 tbs lemon juice
  13. 2 tbs coriander leaves chopped

1. Wash Sabudana under running tap water until the dripping water is clear.

2. Soak them in a 24 cm Combi bowl with 1 cup of water for minimum 5-6 hours, preferably overnight.

3. Drain off excess water if any before cooking.

4. Pour oil in a 28 cm HotPan Prime, place it on stove and set at highest level. Switch on Audiotherm, fit it on Visiotherm and turn until the roasting symbol appears.

5. As soon as the Audiotherm beeps on reaching the roasting window, set at low level and add cumin seeds, curry leaves, ginger and chopper chillies. Cook for a minute more and add chopped potatoes. Cook until they turn soft, stir occasionally.

6. Now add the soaked sabudana, salt, sugar and roasted peanuts.

7. Cook till the sabudana becomes translucent.

8. Turn off the stove, add lemon Juice and coriander leaves and mix well. Season to tase and serve hot.
