Beef steak on creamy vegetables with potato wedges

Potato wedges
  1. 8 mainly waxy potatoes
  2. 1/4 ts paprika powder
  3. 1/4 ts curry powder
  4. 1/4 ts salt
  5. 2 tbs oil, e.g. sesame oil
Steak
  1. 1 red bell pepper
  2. 250 g mushrooms
  3. 1 onion
  4. 1/2 courgette
  5. 2 fillet of beef steaks (à approx. 180 g)
  6. sea salt
  7. ground pepper
  8. 350 g cream
  9. salt, pepper
  10. 1 ts stock (powder)
Potato wedges

1. Peel the potatoes and cut into slices. Pour 150 ml water into the pot. Pour the potatoes into the Softiera insert and place in the pot. Close with Secuquick softline.

2. Place pot on Navigenio and set it at "A". Switch on Audiotherm, enter approx. 4 minutes cooking time in the Audiotherm, fit it on Visiotherm and turn it until the soft symbol appears.

3. At the end of cooking time, depressurise Secuquick, remove and drain potatoes well. Mix potato wedges in a bowl with spices and oil. Rinse and dry the pot.

4. Place pot on Navigenio, set at level 6 and heat pot up to the roasting window using Audiotherm. Place pot in the inverted lid and add the potatoes. Place Navigenio overhead and set at high level. While the Navigenio flashes red/blue, enter approx. 5 minutes in the Audiotherm and bake until light brown.

Steaks and creamy vegetables

5. Remove steaks from the fridge about 30 minutes before preparation. Clean the vegetables and cut them into bite-sized pieces.

6. Place HotPan on stove and set it at highest level. Switch on Audiotherm, fit it on Visiotherm and turn it until the roasting symbol appears. As soon as the Audiotherm beeps on reaching the roasting window, set at low level, dry steaks, insert them and press down.

7. Close with lid, fit Audiotherm and turn it until the roasting symbol appears. As soon as the turning point at 90 °C has been reached, turn meat, switch off stove, put the lid back on and turn off the Visiotherm. Roast until the desired cooking point is reached. Remove steaks, season and keep warm or wrap in aluminium foil.

8. Set stove at medium level and sear the vegetables hot in the open pot. Add the cream and stock, cook while stirring until the cream thickens a little, season to taste.

9. Arrange warm steaks on the vegetables and serve with the potato wedges.

Tip

  • Leave the steaks always to rest before cutting.
