Roasted chilli nuts

  1. 200 g cashew nuts
  2. 200 g sugar
  3. 100 ml water
  4. 2 ts AMC Green Fiery (or spicy grill mix)
  5. 1 ts fleur de sel

1. Mix the cashew nuts, sugar, AMC Green Fiery (or grill mix) and water well and then add to the pan.

2. Switch the hob to highest level and heat the nuts without stirring. Once it begins to cook, switch to a low level.

3. Simmer for approx. 15 minutes while stirring occasionally with a wooden spoon. Cook until the water has evaporated and the sugar is dry. Continue stirring for approx. 5 minutes until the sugar melts again and has coated the cashew nuts.

4. Add the fleur del sel and mix. Distribute the nuts on a baking tray lined with baking paper, use two forks to pull them apart and make sure they are spread out enough. Let cool.
