Avocado cake

  1. 1 avocado
  2. 2 tbs lemon juice
  3. 4 egg
  4. 50 ml sunflower oil
  5. 160 g brown sugar
  6. 250 g flour
  7. 1 package baking powder
  8. 150 ml milk
  9. 2 tbs cocoa powder, unsweetened
  10. 1/2 ts cinnamon

1. Half the avocado lengthwise, remove the stone and the pulp from skin. Mash pulp with a fork and mix with lemon juice.

2. Mix eggs, oil and sugar until foamy and carefully stir in avocado. Mix flour and baking powder and stir into the dough alternately with the milk.

3. Divide dough in half and stir cocoa powder and cinnamon into one half.

4. Cut out a circle of baking paper with the help of the lid 20 cm and place in the pot. Pour both doughs alternately in portions into the pot and then draw a pattern through the two doughs with a fork, creating a marbling.

5. Place the pot on the hob and turn to a low level. Place Navigenio overhead and switch to low level, bake for about 40 minutes.

6. Allow cake to cool slightly, loosen from edge of pan with a knife. Turn out onto a plate lined with baking paper and with the help of a second plate turn it over again, so that the baked side is on top.

Tip

  • To serve, dust with powdered sugar to taste.
