Ripe tomatoes are rich in lycopene and beta carotene which give them the fleshy red colour. Through heating, lycopene becomes very valuable for us. Hence we should have tomatoes regularly in our diet ideally in cooked form too, as sauce or soup. Tomatoes should be stored outside the refrigerator to retain their natural aroma.
