Apple mousse (Apple cider cream)

  1. 1 organic lemon
  2. 4 eggs
  3. 80 g sugar
  4. 20 g cornstarch
  5. 500 ml apple juice
  6. 200 ml cream

1. Wash the lemon in hot water, finely zest the peel, and squeeze out the juice.

2. Mix both with eggs, sugar, cornstarch and apple juice in the pan. Heat up the pan on highest level and bring everything to the boil while stirring constantly.

3. Remove the pan from the hob and continue stirring for a few minutes. Pour it into a bowl, cover directly with plastic wrap and allow to cool a bit. Then let it cool down completely in the fridge.

4. Whip the cream until stiff, fold into the cold cream and serve.
