They contain several vitamins (Vitamin B, Vitamin C, pantothenic acid Vitamin B5), minerals (potassium, calcium, phosphorous), silicic acid, secondary plant substances (e.g. glucokinins) and trace elements (e.g. iron). However, onions lose most of their healthy nutrients on frying, boiling and roasting, hence they should not be overheated.
