Sweet potato skewers

  1. 500 g sweet potatoes
  2. 3 tbs sesame oil
  3. 1 large red chili
  4. 5 stalks peppermint
  5. 4 figs
  6. 200 g sheep’s cheese or soft goat’s cheese
  7. sea salt
  8. liquid honey

1. Peel the sweet potatoes and cut into approx. 1.5 cm thick slices and halve them depending on their size. Mix with the sesame oil.

2. Clean and deseed the chili and chop it very finely along with the peppermint leaves.

3. Clean the figs and cut into segments, then cut the cheese into small pieces.

4. Heat the pan on highest level up to the roasting window, switch to a low level, place the sweet potato slices in the pan and roast until the turning point is reached.

5. Turn the potato slices, dry the inside of the lid with kitchen paper and roast also the second side, until the turning point has been reached.

6. Remove the pan from the hob, season the potatoes with sea salt and skewer each slice with a piece of cheese and fig.

7. Arrange the skewers on a platter, drizzle with a little honey and scatter peppermint and chilli over the skewers. For best results, serve immediately.
