Caramel cream

  1. 6 tbs sugar
  2. 4 eggs
  3. 400 ml milk
  4. 100 ml cream
Caramel:

1. Add 2 tablespoons of sugar to the Softiera insert and place it in the pot.

2. Place Navigenio overhead and switch to the large level, then caramelize for approx. 4 minutes.

3. Remove the Softiera bowl and spread the caramel by gently tilting it (be careful: the Softiera bowl is hot). Let cool.

Creme:

4. Whisk the rest of the sugar, eggs, milk and cream together in a bowl. Pour this mixture over the caramel in the Softiera bowl.

5. Pour 150 ml of water into the pot and place the Softiera insert inside it. Cover with the Secuquick softline and close the lid.

6. Heat the pot on level 6 up to the turbo window, switch to level 2, and cook for approx. 4 minutes in the turbo area.

7. After cooking is finished, place the pot in an inverted lid and allow it to depressurize by itself. Remove the Secuquick.

8. Allow the caramel cream to cool, then place in the refrigerator to chill. Before serving, loosen the edges slightly and tip out onto a plate.

Tip

  • The cream is even better if it is enhanced with some lemon or orange zest or with a pinch of cinnamon.
