Chicken and apricot skewers

  1. 100 g soft, dried apricots
  2. 100 ml apple juice
  3. 2 tbs Marsala wine
  4. 500 g chicken breast
  5. 1 tbs oil
  6. salt, pepper
  7. 1 ts cumin powder

1. Place the apricots, apple juice and Marsala wine into a pot and bring to a boil and let cool down.

2. Cut the chicken breast into cubes. Mix the oil with the salt, pepper and cumin. Toss the chicken in this mixture, cover and marinate for approx. 2 hours.

3. Drain the apricots well, then spear them onto four skewers, alternating with the chicken.

4. Heat the pan at highest level up to the roasting window, switch to a low level and place the skewers inside. Cook until it is time to flip.

5. Turn the skewers, turn off the heat and simmer, covered, for approx. 5 minutes with residual heat.
