Ingredients
- 600 g watermelon and Charantais melon (mixed)
- 1 shallot, finely diced
- 1 red chili, finely diced
- 1 smal piece of ginger
- 3 tbs brown sugar
- 2 tbs olive oil
- 60 ml apple cider vinegar
- 1/2 ts salt
- 1/2 ts mustard seeds
- 1/2 ts tumeric powder
Preparation
1. Remove the seeds and peel the melon, then cut it into small cubes.
2. Place all ingredients together in the pot and let sit for 30 minutes.
3. Heat the pot on highest level up to the vegetable window, switch to a low level and cook for approx. 10 minutes in the vegetable area
4. At the end of the cooking time, remove the lid and simmer the chutney uncovered over medium level, stirring occasionally, until it thickens to a nice, creamy consistency.
