Ingredients
- 1 ripe mango
- 3 tbs lime juice
- 100 g yogurt
- 30 g brown sugar
- 1 tbs mild curry powder
- 100 ml coconut milk
Preparation
1. Peel mango, cut flesh from stone and cut into cubes.
2. Finely blend the mango with the lime juice, yogurt and sugar.
3. Stir in curry powder and coconut milk, pour into jars and chill for about 1 hour.
Tip
- You can replace the lassi with other fruits, such as bananas, depending on your preference. Lassi can also be frozen and served as fruit ice cream. To make a vegan version of lassi, simply replace the milk yogurt with soy yogurt.
