Warm pumpkin salad

  1. 400 g butternut pumpkin
  2. 300 g sweet potatoes
  3. 3 tbs olive oil
  4. 1 tbs white balsamic vinegar
  5. 1/2 tbs maple syrup
  6. 1 tbs coarse-grained mustard
  7. 1/2 ts chili flakes
  8. lemon juice
  9. salt, pepper

1. Peel and deseed the pumpkin and peel the sweet potato. Then cut both into bite-sized pieces and place everything in Softiera insert.

2. Place in the Softiera insert. Pour 150 ml of water into the pot and place the Softiera insert inside. Place EasyQuick with sealing ring 24 cm on pot.

3. Heat the pot on highest level up to the steam window, switch to a low level and cook for approx. 7 minutes the steam area.

4. Mix the olive oil and all the ingredients up to and including the chili flakes, season with lemon juice, salt and pepper.

5. Remove the EasyQuick at the end of the cooking time, take out the Softiera insert and arrange the vegetables on a plate. Drizzle with the dressing and leave to cool slightly.

Tip

  • This warm pumpkin salad is the perfect base for many delicious variations: If you like, you can add creamy feta or burrata, roasted nuts or seeds such as walnuts, pine nuts or pumpkin seeds. Fried tofu or other vegetables such as edamame and rocket also go wonderfully with it - depending on taste and season.
