Ingredients
- 600 g pumpkin (Hokaido)
- 1 red bell pepper
- 4 cloves of garlic
- 200 g feta
- salt, pepper
- 250 ml vegetable broth
- 300 g Rigatoni (or Fusilli)
Preparation
1. Wash, deseed and dice the pumpkin. Clean and dice the bell pepper. Peel the garlic. Place the vegetables in the Softiera insert. Pour 150 ml water into the pot and place the Softiera insert inside. Place Secuquick softline on pot and close it.
2. Switch Navigenio to "A", cook for approx. 5 minutes in the soft program. At the end of the cooking time, place the pot in the inverted lid and leave the pot to depressurize by itself.
3. Finely blend the vegetables together with the feta and the cooking water until a creamy consistency is achieved. Season to taste with salt and pepper.
4. Mix the pasta and vegetable stock in the pan. Add the pumpkin sauce and stir. Place the Secuquick on pot and close it. Switch Navigenio to "A", cook for approx. 5 minutes in the soft program.
5. Depressurize and remove the Secuquick at the end of the cooking time, stir everything well.
Tip
- Serve garnished with fresh herbs, walnuts and chili flakes as desired.
