Zucchini is the small sister of the pumpkin and a must for figure-conscious gourmets. It contains a lot of water, hence has few calories and is easily digestible. It contains very little fat, but has potassium, calcium, phosphorous, iron, Vitamin A and C. The yellow zucchini blossoms are a special delicacy, which are suitable for deep-frying and stuffing. Small zucchinis with smooth, firm skin are very aromatic and can be stored in the vegetable compartment of the refrigerator up to two weeks.
