As the complex carbohydrates in them are broken down by the body only slowly, the blood sugar levels stay stable and hence one feels satiated for long. Lentils with husk have a high amount of nutrients as these are found in the husk. They are soaked overnight and should generally be washed well before cooking. Lentils without husk are more easily digestible that those with it.
