Celery is made of up to 90% water and hence has a low calorie content. Nevertheless it is very rich in potassium, sodium, magnesium and calcium and contains many secondary plant substances that on one hand give it the characteristic aroma, on the other have a positive effect on metabolism. Fresh celery can be identified when on bending, the stalks break immediately. Celery stalks that sag have been stored for too long. Tastes excellent raw as salad or steamed as accompaniment to meat dishes.
