Couscous salad with cranberries and pistachios

  1. 1 clove of garlic
  2. 2 carrots
  3. 1 ts lemon zest
  4. 5 tbs lemon juice
  5. 5 tbs olive oil
  6. 1 ts honey
  7. 1/2 bunch parsley
  8. 40 g dried cranberries
  9. 50 g pistachios
  10. 400 ml vegetable broth
  11. 200 g couscous
  12. 4 ts AMC Golden Punch
  13. salt, pepper

1. Peel and finely chop the garlic. Peel and finely dice the carrots. To make the dressing, mix the lemon juice and zest with olive oil, garlic and honey. Finely chop the parsley. Coarsely chop the cranberries and pistachios.

2. Pour 150 ml of water into the pot, place the Softiera bowl in the pot and mix the vegetable broth, couscous, AMC Golden Punch and carrots inside.

3. Close with the EasyQuick with the 20 cm sealing ring. Heat the pot on highest level up to the steam window, switch to a low level and cook for approx. 4 minutes in the steam area.

4. Fluff the couscous with a fork and mix in a bowl with the cranberries, pistachios and salad dressing. Season with salt and pepper. Sprinkle chopped parsley over top and serve.
