Red lentil soup with mint yoghurt

Lentil soup:
  1. 1 onion
  2. 1 garlic
  3. 200 g red lentils
  4. 1.2 L vegetable broth
  5. 1 bay leaf
  6. 2 tbs ajvar (hot paprika cream)
  7. 1 tbs tomato paste
  8. salt, pepper
  9. cayenne pepper
  10. lemon juice
  11. 2 tbs olive oil
Mint yogurt:
  1. 3 stalks peppermint raw
  2. 200 g greek yoghurt
  3. salt, pepper
Lentil soup:

1. Peel onion and garlic clove and cut into cubes.

2. Add to the pot and cover with lid. Place pot on hob and set it at highest level. Switch on Audiotherm, fit it on Visiotherm and turn it until the roasting symbol appears.

3. As soon as the Audiotherm beeps on reaching the roasting window, set hob at low level, remove the lid and roast onion mixture.

4. Add lentils, broth and bay leaf. Stir in the ajvar and tomato paste.

5. Set hob at highest level, heat up until the vegetable window has been reached, set hob at low level and cook for approx. 10 minutes using Audiotherm.

6. At the end of cooking time, remove bay leaf and season with salt, cayenne pepper, lemon juice and olive oil.

Mint yogurt:

7. Pluck the mint leaves, chop in Quick Cut, add the yoghurt and mix. Season with salt and pepper.

8. Serve soup with mint yoghurt.

Tip

  • Yoghurt is a good source of calcium, keeps bones stable and helps prevent osteoporosis. Valuable lactic acid bacteria stimulate the immune system and support a healthy intestinal flora. Best you prefer natural yoghurt, for a fruity variety add some homemade jam.
