  1. 500 g flour
  2. 100 g lard
  3. 1 ts baking powder
  4. 1 tbs salt
  5. 150 ml water, lukewarm
  6. 150 ml milk, lukewarm

1. Knead all ingredients into a smooth dough. Cover and let rest in the fridge for approx. 60 minutes.

2. Thoroughly knead the dough again, divide into ten pieces and roll out thin. Pierce each piece several times with a fork.

3. Heat the pan on highest level up until the perfect temperature for roasting is reached. Switch to a low level and place first piadina into the pan.

4. Roast each side for approx. 2 minutes. Continue with the rest of the piadine.

5. Halve the piadina, put the desired toppings on each half and fold up to a quarter.

Tip

  • For the filling: - cheese: e.g. mozzarella, Parmesan, Brie, Gorgonzola, or goat cheese - cooked ham, raw ham, salami, or bacon - rocket or lettuce - cream cheese, ricotta, or créme fraîche - pesto or tapenade - grilled vegetables or mushrooms - pears or figs
