Mini pancakes with caramelized banana

  1. 125 g flour
  2. 1 ts baking powder
  3. 1/2 ts sugar
  4. 250 ml milk
  5. 2 eggs
  6. 1 banana
  7. honey
  8. 4 ts butter

1. Mix all ingredients up to and including the egg into a smooth batter and let rest for 30 minutes.

2. Halve the banana. Divide each half into three pieces.

3. Heat the pan on highest level up until the perfect temperature for roasting is reached. Switch to a low level, add 1 tsp butter and spread it around evenly.

4. Roast 3 banana slices in the butter for approx. 1 minute on each side, drizzle each with approx. 1 tsp of honey. Pour the batter over it so that it runs down a little to the right and left of the banana slice.

5. As soon as the batter firms up, turn over and roast until done.

6. Roast the other banana pancakes until done, according to the instructions provided in points 4 and 5.
