Lebanese meatballs and rice (Dawood basha)

  1. 1 cup rice
  2. 1 cup water
  3. 500 g minced meat
  4. 1/2 ts black pepper
  5. 1 ts cinnamon
  6. 2 ts salt
  7. 2 tomatoes
  8. 15 small onions
  9. 1 ts tomato paste
  10. 1 tbs vinegar
  11. 2 tbs olive oil
  12. 1 ts sumac
  13. 1 ts oregano
  14. 1/2 cup fried vermicelli

1. Overview of the ingredients.

2. Soak the rice in water for half an hour.

3. Mix the meat with 1/2 of the black pepper, 1/2 of the cinnamon and 1/2 ts of salt. Shape the mixture into small balls.

4. Peel tomatoes and puree with Quick cut.

5. Peel onions, place inside the pot and cover.

6. Place pot on Navigenio and set it at level 6. Switch on Audiotherm, fit it on Visiotherm and turn it until the roasting symbol appears.

7. As soon as the Audiotherm beeps on reaching the roasting window, set Navigenio at level 2 and roast onions until they reach a nice brown color. Put onions aside when ready.

8. Put meatballs in the pot and roast both faces. Adjust Navigenio to level 4 if needed. When the meatballs reach a nice brown color, add the roasted onions.

9. Add half a teaspoon of salt, the remaining cinnamon and black pepper. Stir slightly, add tomato puree, tomato paste, vinegar, 1 tbs spoon of olive oil, sumac, oregano. Mix well.

10. Place the vermicelli inside the Softiera bowl with the rice and a glass of water. Add a tablespoon of salt with a tablespoon of olive oil and stir.

11. Place Softiera bowl inside the pot above the meatballs and cover.

12. Set Navigenio on “A”, enter approx. 15 minutes cooking time in the Audiotherm, fit it on Visiotherm and turn it until the vegetable symbol appears.

13. At the end of cooking time, remove Softiera bowl, place it into the inverted lid and serve food.

Tip

  • You can serve rice and meatballs with green cabbage salad.
