Hot dog with smoked carrot

  1. 4 carrots
  2. 50 g lettuce
  3. 4 pickles
  4. 2 radishes
  5. 1 untreated lemon
  6. 3 tbs brown sugar
  7. 1 ts AMC Pepper Trio (or pepper)
  8. 2 tbs sea salt
  9. 4 hot dog buns
  10. spicy mayonnaise
  11. 5 tbs roast onions
  12. 100 g wood chips for smoking

1. Peel carrots and place in the Softiera insert. Pour 120 ml water into the pot and place the Softiera insert inside it. Close with the EasyQuick with the 20 cm sealing ring. Place the pot on the Navigenio, heat on level 6 up to the steam window, switch to level 2 and cook for approx. 8 minutes in the steam area.

2. Clean the lettuce and cut into fine strips. Cut pickles and radishes into fine slices. Wash the lemon in hot water and finely zest the peel.

3. Mix sugar, pepper, salt and lemon zest and rub into the carrots. Cover and marinate for approx. 1 hour.

4. Cut out a circle of baking paper with the help of a 24 cm lid and place in the sieve insert, add the prepared carrots.

5. Line the pot well with aluminum foil, put wood chips in and cover with the lid. Place the pot on the Navigenio and heat on level 6 up to the roasting window.

6. Place the sieve insert with the carrots on the pot and close with lid again. Switch Navigenio to “A” and cook for approx. 10 minutes in the 60°C program.

7. Distribute the smoked carrots in the hot dog buns and serve with lettuce, spicy mayonnaise, fried onions, pickles and radishes.

Tip

  • It will take a few minutes to reach the ideal temperature of 60°C. This wait is necessary for the Navigenio to heat in a particularly gentle way without allowing the temperature to get too hot.
