- 1 tbs lemon juice
- 1/4 ts salt
- 50 g feta
- 2 stalks mint
- 4 slices watermelon
- 30 g rocket
- 20 g roasted pine nuts
- 2 tbs balsamic cream
1. Mix lemon juice and salt together. Finely crumble the feta. Finely cut the peppermint leaves.
2. Heat the pan on the highest level up to the roasting window, switch to a low level and place the melon slices in the pan. Roast until the turning point is reached. Turn the slices and roast until the turning point is reached again.
3. Remove the melon slices from the pan, let them cool to lukewarm and brush them with lemon juice.
4. Wash the rocket and serve the melon slices on it. Sprinkle feta, pine nuts and peppermint on top as well as a dash of balsamic cream.
