  1. 1/2 mango
  2. 1 shallot
  3. 1 bunch coriander
  4. 2 tbs lime juice
  5. 1 tbs sunflower oil
  6. 2 ts coarse-grained mustard
  7. 2 ts AMC MEXICAN

1. Peel the mango and cut the pulp away from the pit. Coarsely dice the mango. Peel and coarsely dice the shallot.

2. Put both in the Quick Cut with all other ingredients and finely puree.

Tip

  • The marinade is ideal for poultry. It’s best to let the marinade sit for 2–3 hours and to gently strip it off before roasting or grilling.
