Chicken Dum Biriyani

Rice:
  1. 8 cups water
  2. 1 kg basmati rice washed and soaked
  3. whole spices (2 black cardamoms, 2 green cardamoms, 2 sticks cinnamon, 6 cloves, 2 bay leaves)
  4. salt to taste
Other Ingredients:
  1. 2 tbs oil
  2. 4 onions sliced
  3. 3 green chillies, slit
  4. whole spices (2 black cardamoms, 2 green cardamoms, 2 sticks cinnamon, 6 cloves, 2 bay leaves, 1/2 tsp. saunf)
Garnishing:
  1. 4 onions, sliced and stir fried with 2 tsp. oil
  2. 5 tbs coriander leaves, chopped
  3. 5 tbs mint leaves, chopped
Marinade:
  1. 1 1/4 kg chicken, cut into big chunks
  2. 1/2 ts turmeric powder
  3. 1 ts chilli powder
  4. 1 ts salt
  5. 4 tbs curd

1. Mix all ingredients for marinde together with the chicken and keep it in the refrigerator for 1 hour.

2. Pour oil and sliced onions in a 20 cm HotPan Prime, place it on the hob and set it at highest level. Switch on Audiotherm, fit it on Visiotherm and turn it until the roasting symbol appears. As soon as the Audiotherm beeps on reaching the roasting window, remove the lid and roast the onions until they turn golden brown.

3. For the rice, pour the water into a 24 cm pot, place on hob and set at highest level. Heat pot up to the vegetable window using Audiotherm. As soon as the Audiotherm beeps on reaching the vegetable window, remove the lid and add washed and soaked rice with whole spices. Set hob at highest level and heat pot up to the vegetable window using Audiotherm. As soon as the Audiotherm beeps on reaching the vegetable window, remove the lid and allow the rice to cook for 2-3 minutes until it is half boiled.

4. Strain the rice using a 24 cm Softiera insert and keep it aside.

5. For layering of biriyani, set stove at highest level and heat up a 32 cm 9.5 l pot to the roasting window using Audiotherm.

6. As soon as the Audiotherm beeps on reaching the roasting window, remove the lid and add oil, whole spices, onion and green chillies. Roast the onions until golden brown. Add coriander powder and garam masala. Then add the marinated chicken, mix well.

7. Sprinkle coriander and mint leaves with roasted onions over the chicken and layer the rice on top. Finally garnish with few coriander leaves, roasted onions and pour in the saffron soaked milk.

8. Set hob to highest level and cook approx. 15 minutes.

9. Switch off the hob, open the lid, mix the rice and serve hot.

I can't see how much saffron milk is to be added. Can you please help?
