Peanut oil belongs to the recommended edible fats, thanks to good fatty acid composition. Because of the extra high smoking point of refined peanut oil of 230 °C, it is well suited for deep-frying. For salads and dressings, ideally cold-pressed peanut oil should be used as it gives a more intensive, nutty flavour and has more nutrients.
