Cream is made from milk and is the most fatty part of it. It should have a minimum fat content of 30% which is enough to cook it in hot dishes without clumping. Cream has a very creamy flavour which makes it super for baking and refining savoury dishes. To get perfectly whipped cream, the cream, mixing bowl and the mixer should be cold. For long shelf life, cream should be stored in the refrigerator.
